Abstract:
Today is an urgent search for new raw material sources of bioactive compounds of plant origin. These include virtually all food plants used in traditional medicine, and are characterized by extensive habitat growth. The widespread culture of shrubby plants - Gooseberry and tree species - Mulberry are interested in this respect. Plant polysaccharides form a large and very important group of natural compounds - carbohydrates and are rapidly renewable resources of organic substances with unique physical, chemical and biological properties. Properties of polysaccharides is determined by their monosaccharide composition and molecular weight. The aim was to study the molecular weight of water-soluble polysaccharides (VRPS) and pectins (PT) obtained from the leaves of the mulberry black, white and gooseberry rejected by extraction. In this work we found some physicochemical characteristics: molecular weights, Huggins constant, the degree of swelling. The results showed that the value of the molecular weight of the studied objects is in the range between 2700 and 19000. The correlation was found between the values of the average molecular weight of VRPS and PT, the Huggins constant and the degree of swelling. All VRPS with increasing molecular weight increases the degree of swelling, but decreases the value of the Huggins constant. However, the duty cycle, this dependence is observed only in mulberry leaves. In all VRPS, by increasing molecular mass the degree of swelling increased, but the constant Huggins decreased. However, such dependence was observed only for the PT of Mulberry leaves. The lowest values of the constants Huggins, was found in Gooseberry rejected PT, which indicates good interaction with water and compatible with the size and degree of swelling. From the values of average molecular weight, degree of swelling, dissolution dependent physical and technological properties of polymeric compounds, so further study of physicochemical properties of VRPS and this raw material will determine the possibility of their most effective use.
