Assessment of the Content of Selenium in Wheat Growing in Various Regions of the Orenburg Region

Abstract:
Among the food factors having special value for maintenance of health of the person, the major role belongs микронутриентам - vital macro and to microcells. Selenium is one of the most scarce essentsialny microcells who plays an important biological role in an organism.
It is established that on consumption of microcells, in particular selenium, the geological origin of the district, system of agriculture and feature of the food industry especially influences.
Grain are one of the main sources of selenium for a world\'s population and, in particular, for Russia where in comparison with other countries on a share of meat, dairy products and eggs essentially smaller part of this microcell arriving with food whereas with grain products inhabitants of Russia receive to 50 % of dietary selenium is necessary.
The carried-out monitoring according to the content of selenium in grain of wheat of the Orenburg region allowed to establish the average content of selenium in wheat 95,8 ± 2,1 at an interval of concentration of 57-187 mkg/kg that doesn\'t exceed factor of maximum concentration limit for grain, which makes 500 mkg/kg (No. 2450-81; M: MZ Russian Federation, 1982). As a result of the carried-out research, areas with different levels of accumulation of selenium are allocated.
Results of research show that higher concentration of selenium in wheat are noted in east part of studied area, and the lowest values are fixed in central and North - the western areas where concentration of selenium in wheat makes only 70-90 mkg/kg.
Comparing these concentration of selenium in wheat in various regions of the world, it is possible to note that in the conditions of Russia wheat accumulates in 2-6 times smaller quantity of a microcell, than in endemichesky regions of the USA, Canada and Australia (the average content of selenium in wheat of 600 mkg/g).
Thus, the Orenburg region according to the content of selenium in wheat treats regions with the low maintenance of this bio-element in wheat, compared with world leaders on this indicator, and in comparison with different regions of Russia takes very an average position.
