Development of technological modes of biokatalize of pine nut oil cake for maximum extraction of protein substances

The problem of malnutrition today is very acute for the world community. According to the latest studies, it has been established that more than half of the population does not receive with food in the required amount of high-grade protein, rich in all essential amino acids. At the same time, there is a large amount of waste from various industries that can be used as a raw material for the isolation of such protein. Cedar cake is a valuable source of useful nutrients necessary for nutrition. In this work, studies were carried out to optimize the parameters of alkaline and enzymatic extraction in order to achieve the maximum yield of protein fractions from cedar cake. To this end, well-known and generally accepted research methods were used, as a result of which such parameters of alkaline hydrolysis of cedar cake were chosen, at which the yield of protein was 80.5%. It was also proved that the preliminary carrying out of enzymatic hydrolysis of the raw material with enzyme preparation Diazim X4 or Amylosubtilin leads to an increase in the yield of protein fractions to 95.5%. Thus, as a result of the studies, an optimal sequence of operations is proposed to maximize extraction of the protein-vitamin complex from pine nut cake, which can be used to create functional foods.
